

Fresh Tomato & Basil Pasta

Serving Size: 6-8 Servings
Ingredients
1 box Dreamfields Angel Hair
2 tablespoons olive oil
5 cups coarsely chopped tomatoes (see note below)
1/2 cup chopped fresh basil
4 cloves garlic, minced
Salt
Coarsely ground black pepper
Shredded Parmesan cheese (optional)
Directions:
1. Cook pasta according to package directions. Drain; return to pan. Toss with 1 tablespoon oil.
2. Meanwhile, in large bowl, toss together tomatoes, basil, garlic and remaining 1 tablespoon oil.Add salt and pepper, as desired.Arrange pasta on platter; top with tomato mixture. Sprinkle with Parmesan cheese, if desired.
Note: Use fresh, firm, ripe tomatoes. Could include heirlooms, grape, cherry, etc.
