These cookies will be ready within 15 minutes if you make the dough up ahead of time.


2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter or margarine, softened
1 cup sugar
1 egg
1 Tablespoon peppermint extract
1 teaspoon red food coloring and 1 teaspoon blue food coloring


Sift dry ingredients together. Set aside.

Beat the butter until smooth and fluffy. Gradually add the sugar. Beat in the egg and extract. Gradually add the flour mixture, beating until smooth.

Divide the dough in half. Remove about 1/4 cup from each half and combine together. Add red food coloring to one half and blue food coloring to the smaller amount of dough. Keep one half plain. Cover dough and chill at least one hour.

Roll red dough between 2 pieces of plastic wrap into an 9 inch square. Repeat with white dough. Cut each square in half. You will have 4 rectangles.

Roll the blue dough into 2 inch by 9 rectangle. Cut in half lengthwise. Carefully remove the top piece of plastic wrap. If edges of dough are uneven, trim into a straight line. Invert one white piece on top of one red piece. Add second white piece and second red piece, removing plastic wrap as you go. Cut away a one inch strip along one side going through only the top 2 layers. Place narrow blue dough strip where cut dough was removed. Wrap the log in plastic wrap and freeze about 4 hours, or overnight.

Cut frozen dough into 1/2 inch thick slices. Place on foil-lined cookie sheets and cook 400F for 8-10 minutes, or until cookies are slightly browned. Cookies will spread slightly.
