

Amish-Style Strawberry Pie
Ingredients
1 1/2 cups water
3/4 cup sugar
2 tablespoons cornstarch
3 tablespoons strawberry gelatin
1 teaspoon lemon juice
1 quart fresh strawberries
whipped cream for topping (optional)
1 9 inch baked and prepared pie crust
Instructions
1. Boil together water, sugar and cornstarch for 1 minute.
2. Remove from heat and add gelatin and lemon juice.
3. Cool slightly and and add strawberries.
4. Pour into cooled 9" baked pie crust.
5. Serve with whipped cream (optional).
Notes:
If using frozen strawberries, increase cornstarch and gelatin 1 1/2 times.

I have made strawberry pie like this for years, minus the lemon juice. It is a good way to use up your strawberries that might have gotten a little soft.

I HAVE THE EXACT RECIPE THAT I MAKE ALL THE TIME..BUT, THERE IS ONE THING DIFFERENT..I USE 3 OZ. PACKAGE OF STRAWBERRY JELLO..NOT 3 TBS OF JELLO..I DON'T KNOW IF THIS COULD BE A MISTAKE BUT MY RECIPE TURNS OUT WONDERFUL AND WORTH THE TIME TO MAKE...ENJOY

We used to live near a large Amish community and were friends with some of the members. They made lots of wonderful things. I do not ever remember the ladies using Jello and think this should have called for Knox unflavored gelatin. I have seen pies made with the box of Jello though, just not by Amish. LOL
