1 pkg lemon or lime Jello
1 cup boiling water
1 cup small curd cottage cheese
1 cup Miracle Whip
1 medium cucumber, chopped fine
1 medium onion, chopped fine
1 tbsp vinegar
Dissolve Jello in boiling water. Let cool, but not set. Add remaining ingredients. Refrigerate.

Once again....I want to add that I have never made it in a mold...not sure it would hold up (I did not submit the photo) I make it in a casserole dish. And I have never tried it with the lemon jello, might be delicious, but I cannot attest to that. I hope you all enjoy it as much as I do......refreshing unique yummy dish

I submitted the recipe....but not the picture. I have actually never made it in a mold, never thought of it, but don't own one anyway. I am prtty sure it would not hold up. We've always just made it in a casserole dish. I have also never used lemon jello, always lime.
