

6 chunks of canned or fresh pineapple (Next time you get a fresh pineapple- Ask for a Hawaiian Grown Pineapple- support local growers as it is fresher and you will see the difference.)
8 mint leaves
1/2 oz. simple syrup (dissolve one part sugar in one part hot water)
Juice from a lime, plus a couple of pieces
2 oz. Bacardi Limon rum
Splash of soda
Directions
Muddle all ingredients but rum in a glass. Add ice, rum, and a splash of soda. Stir well. Garnish with pineapple.
Enjoy Well!

Thanks Darin. Unfortunately the supermarkets where I live no longer sell Hawaiian pineapples, only the so-so ones from Costa Rica. I really miss the sweetness of the ones from Hawaii.
