

Serves 6
This recipe isn't my own creation, but it's delicious and easy to prepare. It tastes wonderful with a freshly made salad and a crusty bread.
Ingredients:
5 large tomatoes, each cut into eighths
3 T olive oil
2 T minced garlic
3/4 tsp. kosher salt
3/4 tsp. freshly ground black pepper
1 1/2 lb. medium shrimp, peeled and deveined
1/2 C chopped fresh parsley
2 T lemon juice
1 C feta cheese, crumbled
Directions:
Preheat oven to 450 degrees F. Place tomatoes in large baking dish. Spoon olive oil and garlic over tomatoes. Sprinkle with salt and pepper and toss. Place on top rack of oven and roast for 20 minutes.
Remove baking dish from oven and stir in shrimp, parsley, and lemon juice. Sprinkle with feta cheese. Place back in oven for another 10 to 15 minutes or until shrimp are cooked.

Yes it does except for the feta cheese. Will have to substitute with another cheese. Thanks.
