

This is an easy and tasty casserole recipe I have had for years.
Ingredients:
1 pound ground beef
1/2 cup chopped onion
3/4 cup water
1/4 teaspoon pepper
1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1 (8-ounce) package frozen mixed vegetables, thawed
2 cups (8 oz.) shredded mozzarella cheese
1 (12-ounce) can flaky refrigerated biscuits (about 10 biscuits)
1 tablespoon margarine or butter, melted
1/2 teaspoon dried oregano leaves, crushed
Directions:
Heat oven to 375F. Grease 12x8-inch (2 quart) baking dish. In large skillet, brown ground beef and onion; drain. Stir in water, pepper, tomato sauce and tomato paste; simmer for 15 minutes, stirring occasionally.
Remove from heat; stir in vegetables and 1? cups of the cheese. Spoon mixture into greased baking dish.
Separate dough into biscuits. Separate each biscuit into 2 layers. Place biscuits near outer edge of hot meat mixture, overlapping slightly.
Sprinkle remaining cheese in center. Gently brush biscuits with margarine; sprinkle with oregano.
Bake at 375F. for 22 to 27 minutes or until biscuit topping is golden brown. 6 to 8 servings.

Thanks for sharing. I make something like this but leave off the biscuit topping as we don't need wasted calories and fat.

I would use layers of lasagna noodles instead of the biscuits. Of course, then it is lasagna and not a casserole...

I make something like this, but instead of the frozen mixed veggies, I use fresh chopped broccoli and carrots. I would think any veggies your family likes would be good in this.
