

Ingredients:
1 lb. cooked, cut up chicken
1 bag mixed frozen veggies
1 lb. cheddar cheese, cubed
2 cans mushrooms [or fresh]
1 medium onion, diced
1/3 cup slivered almonds [more or less to taste]
garlic to taste
pepper to taste
1/2 cup mayonnaise or enough to coat mix
3/4 cup cornflake crumbs
2 TBL butter
Directions:
Put first 6 ingredients in a large casserole dish. Add garlic and pepper to taste. Toss with just enough mayo to coat evenly. Sprinkle top with corn flake crumbs. Dab here and there with butter. Bake 35-40 minutes at 375 until hot and bubbly.
Great thing about this recipe is that amounts are not crucial; you can add more or add less of the ingredients based on your preference. It's also a good way to use up leftover chicken and veggies.

I'd use panko bread crumbs or crushed potato chips on top. I hate corn flakes on foods.

This is similar to my recipe except mine doesn't have the vegi's and I add water chestnuts, cream of mushroom soup (homemade) and rice. Very yummy and a family favorite.
