Easy Chicken and Rice Casserole


4 boneless breast of chicken 350 for approx 40 min.
1 cup of uncooked white rice
1 can of cream of mushroom soup
1 can of water
1 red bell pepper, sliced
1 teasp on cheyene pepper
1 can of mushrooms or 1 cont of fresh sliced mushrooms
small package of shredded cheddar cheese of your favorite shredded cheese.
optional zuchinni sliced thin.
optional sliced sauted small onion
optional parsley
salt and pepper to taste.


Saute the chicken breast till done. Let cool slightly and slice or cube chicken.

In a large casserole dish put a cup of white rice add the chicken, the red bell pepper, mushrooms, optional zucchini to the rice mixture. Don't forget the cheyene pepper, (I have skipped this and regretted it)

Dump the can of cream of mushroom soup over this, then fill the can with water and dump this over too ****DO NOT STIR***

I sprinkle very lightly with parsley and lightly sprinkle the cheese over this mixture and cover with foil.

Cook at 350 for approx 40 minutes, until rice is done...ready to serve.
