Ingredients
5 medium onions, sliced and separated into rings
3 tablespoons butter
3/4 cup water
1/8 teaspoon ground allspice
2 tablespoons all-purpose flour
1 can (5 ounces) evaporated milk
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoons grated Parmesan cheese
2 tablespoons dry bread crumbs
Directions
1. In a large skillet, saute onions in butter for 5 minutes. Add water and allspice; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender.
2. Combine flour and evaporated milk until smooth; gradually stir into the onion mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in sugar and salt.
3. Transfer to a greased 1-qt. baking dish; sprinkle with cheese and bread crumbs. Bake, uncovered, at 350 degrees for 30-35 minutes or until bubbly.

I think I could lighten this recipe up a bit. It's a tad heavy. But with that being said, I think my 9 year-old daughter would love this. I watched her eating the other night. She pulled raw vidalia off of her burger and was eating it by itself. Then she proceeded to take more vidalia slices and eat those, as well. It was almost like she was eating apple slices. Amazing!

She's funny that way -- she likes spicy things, but yet her older sister won't eat anything that is even slightly spicy. She says it makes her tongue itch if food is spicy! haha

OH to have a child who likes onions - mine can tell if an onion was next to it in the frig and then won't eat it!!
